Super quick dinner: Pineapple, black beans, and couscous!

There are no excuses to not eat healthy! This is a supper quick dinner that you can make in just minutes. It is very healthy and full of protein from the black beans and couscous. I also love the spice from the taco seasoning with the sweetness from the pineapple.

Here is what you need:

1 can black beans drained and rinsed
1 can pineapple, reserve the juice
1 cup couscous
1/2 cup water
1/3 cup warm water
2 tbs taco seasoning

Combine the pineapple juice and 1/2 cup water in a pan on the stove or in a microwave safe bowl. Bring the liquid to a boil, remove from heat, and add the couscous. Let sit for 5 minutes and fluff with a fork. 

In a medium skillet over medium heat combine black beans and pineapple. Mix taco seasoning with 1/3 cup warm water and then add to black beans and pineapple. Cook until warmed through. 

To serve place some couscous in a bowl and top with pineapple and black bean mixture.
